Isani et al. (2022) This study used an in vitro model (digestion/Caco-2) to assess the availability of the iron in iron-enriched spirulina. The results showed that spirulina had a higher iron availability than meat, yeast and wheat flour, and an availability comparable to iron sulphate combined with vitamin C.
